Drafting the Summary

An executive summary is an extremely important first step in your business. You have to be able to put the basic facts of your business in an elevator pitch-style sentence to grab investors’ attention and keep their interest. This should communicate your business’s name, what the products or services you’re selling are and what marketplace you’re entering.

Qu’est-ce qu’un business plan  ?

Le business plan (ou plan d’affaires) est un document physique ou en ligne présentant de manière synthétique un projet d’ouverture ou de reprise d’une entreprise. Le business plan présente de manière détaillée la stratégie commerciale et financière d’un projet de création d’entreprise . À la manière d’un CV, il aiguille ses destinateurs sur la motivation, la personnalité et le degré de préparation d’un projet entrepreneurial.

Dans le cadre d’un projet d’ouverture de restaurant, le business plan agit en tant que support de communication pour convaincre investisseurs, futurs clients ou même futurs employés de la viabilité et pérennité du projet dans les années à venir.

Un business plan d’un restaurant doit être rédigé dans le cadre d’une création ou d’une reprise d’activité afin d’étayer d’éventuels changements qui pourraient avoir un impact sur les prévisions financières du restaurant.

La rédaction d’un business plan doit répondre globalement aux questions suivantes : 

  • Parcours personnel et scolaire du ou des porteurs de projet 
  • Concept (culinaire, aménagement restaurant, etc)
  • Étude de marché et concurrence 
  • Besoins financiers (prévisions, modes de financement, calcul de rentabilité)

Pourquoi rédiger un business plan pour son restaurant 

S’il n’est pas obligatoire, le business plan d’un restaurant structure le projet d’ouverture ou de reprise d’un restaurant en permettant au porteur de projet d’analyser ses forces et faiblesses, les points d’amélioration à apporter et les moyens d’y arriver. 

Que vous planifiez d’ouvrir un restaurant traditionnel, un café , un bar , un kébab , un restaurant éphémère ou tout autre type d’établissement, le business plan constitue le socle sur lequel chaque porteur de projet doit pouvoir s’appuyer pour étayer sa vision et ses besoins financiers, qui permettront ensuite d’affiner sa stratégie marketing.

Revoir son business plan de manière régulière à mi-parcours (par exemple, à 1.5 an dans le cadre d’un business plan sur 3 ans) permet d’évaluer objectivement les points positifs et négatifs et d’ajuster le tir si nécessaire. 

  Le business plan est également pertinent dans la recherche de financement de son projet : 

  • Obtention d’un prêt bancaire ;
  • Négociation de délais de paiements auprès de fournisseurs ou partenaires potentiels ; 
  • Levée de fonds auprès d’investisseurs.

Le business plan d’un restaurant se compose en général de deux parties : 

  • Une partie “stratégie et opérations” qui doit inclure une analyse du marché, positionnement, stratégie marketing, produits et services (menu), ou encore vision : utile pour convaincre futurs associés, employés ou partenaires de la pertinence du projet ! 
  • Une partie “Analyse financière” qui doit recenser un compte de résultat prévisionnel, le plan de financement prévisionnel ou encore le flux de trésorerie (besoin en fonds de roulement, capacités d’autofinancement)

Une fois la structure et le contenu de votre business plan en tête, la seconde étape consiste à lui donner vie. Voici quelques conseils pour accoucher d’un business plan qui ne rebutera pas vos interlocuteurs (mieux : qui leur donneront envie de travailler avec vous ! ): 

  • Clarté et lisibilité de votre contenu : évitez les jargons !
  • Soyez concis et synthétique :  à la manière d’un CV ou d’une lettre de motivation, le business plan d’un restaurant doit inciter vos lecteurs à vous contacter pour en apprendre davantage.
  • Pensez à étayer vos propos avec des sources fiables : une étude de marché ou une analyse de la concurrence avec des chiffres erronés sera facilement identifiable par un banquier ou un investisseur. Soyez le plus rigoureux possible, sous peine d’entacher votre crédibilité et votre motivation  !

Résumé opérationnel : la pierre angulaire de votre business plan 

Tout business plan dans le secteur de l’hôtellerie-restauration doit commencer par un résumé opérationnel exhaustif : votre idée visualisée sur une ou deux pages sous les angles opérationnels les plus importants. Pensez à quoi, où, comment et pourquoi.

La mission, la vision et les objectifs de votre activité doivent absolument figurer dans cette section, de même que votre clientèle cible, votre positionnement sur le marché, la concurrence et l’analyse financière.

Données sur l’entreprise

Dans cette section de votre business plan, vous devez fournir des informations similaires à celles de la section précédente, mais centrées sur votre activité. Les données importantes à inclure ici sont les suivantes :

  • Nom commercial
  • Siège social ou lieu d’activité
  • Forme juridique
  • Date de lancement
  • Numéro d’entreprise ou de chambre de commerce
  • Numéro de TVA
  • Secteur ou branche
  • Licences de restauration

Il est temps de décrire plus en détail votre idée unique. 

Avez-vous constaté un problème ou une lacune sur le marché ou dans la région où vous souhaitez vous implanter ? Quelle est la solution proposée par votre concept ? Énumérez quelques caractéristiques clés de votre concept : thème, identité, emplacement , groupe cible et concurrence la plus proche. 

Remarque : n’entrez pas dans les détails, car la plupart de ces caractéristiques seront traitées dans les chapitres suivants de votre business plan.

Plan et agencement

Dans cette partie, vous pouvez approfondir la v isualisation de votre futur établissement de restauration : comment voyez-vous l’aménagement de votre établissement ? 

Déroulez le plan de salle de votre établissement. Faites la distinction entre les zones opérationnelles telles que le bar, la cuisine, la réfrigération, le stock, les installations sanitaires, etc. et les zones réservées aux sièges et aux repas des clients. 

Décrivez le style que vous souhaitez donner à votre établissement. Pensez à certains matériaux, à des couleurs spécifiques, à des meubles et à des accessoires. Un mood board créatif peut être utile pour représenter vos choix non seulement verbalement, mais aussi visuellement.

Estimez la taille du marché sur lequel vous allez travailler et découvrez si certaines mesures gouvernementales en cours d’élaboration pourraient avoir des implications (positives ou négatives) sur votre marché.

Déterminez le groupe cible auquel votre concept est le mieux adapté et recherchez comment vous pouvez attirer ce public dans votre restaurant. Passez en revue les catégories de clientèle les plus courantes : étudiants, jeunes adultes, touristes, employés de 9 à 5, navetteurs, travailleurs à domicile, etc.

Concurrence

Dans un monde idéal, vous lancez votre restaurant dans un secteur ou zone où votre concept est unique. Dans la réalité, il est courant que des concurrents ayant les mêmes concepts soient présents sur votre marché. Prenez donc le temps de faire une analyse de la concurrence et ajoutez-la à votre business plan – que ce soit dans cette section ou dans une annexe séparée. 

Comparez votre concept, votre approche, vos offres et vos prix à ceux de vos plus proches concurrents, et expliquez pourquoi et comment votre futur restaurant  se distingue des autres.

Emplacement 

C’est sans aucun doute l’un des aspects les plus importants et les plus difficiles du lancement d’un restaurant . Les locaux prestigieux situés dans des endroits très prisés ont souvent un coût élevé, que tous les entrepreneurs débutants ne peuvent pas se permettre. Mais parfois, commencer avec un plus petit emplacement est une meilleure stratégie à long terme que de tout miser sur une localisation coûteuse et de faire face à la dure réalité financière quelques mois après l’ouverture. 

Analyse SWOT

L’analyse des forces, faiblesses, opportunités et menaces (matrice SWOT) est une valeur ajoutée objective à tout business plan pour le secteur de l’hôtellerie – restauration qui ne doit pas être sous-estimée. Avec une analyse SWOT, vous exposez clairement les forces et les faiblesses de votre entreprise, et vous découvrirez sans doute des opportunités ou des menaces que vous n’aviez pas envisagées. Sur la base d’une analyse SWOT, vous pouvez tirer des conclusions claires et des points d’action et les mettre en œuvre correctement. 

Votre concept a beau être fantastique : si vous ne recevez pas de clients, vous pouvez rapidement fermer vos portes. Raison de plus pour réfléchir aux techniques et stratégies marketing que vous envisagez pour attirer votre public cible et le fidéliser.

Ford is changing its EV plans again

Ford changed its electric-vehicle strategy again, canceling long-held plans for electric three-row SUVs and delaying production of its next electric pickup truck.

In a strategy shift that Ford says will initially cost the company nearly $2 billion, the American automaker is replacing the canceled electric SUVs with hybrid models, its chief financial officer, John Lawler, told reporters on a Wednesday-morning call.

Lawler said that after assessing pricing pressure on EVs and the cost of a battery large enough to power three-row SUVs, as well as taking into account consumer demand , Ford found that it wouldn't be able to meet its goal of achieving profitability for the electric SUVs within the first year of launch.

"These vehicles need to be profitable," Lawler said. "If they're not profitable based on where the customer is — where the market is — we will pivot and adjust."

Ford is also reducing spending on EVs to 30% of capital expenditures from 40% previously.

In addition to the canceled EVs, Ford is pushing back production of its next full-size electric pickup truck to late 2027. Output of that vehicle was planned to start next year at Ford's new EV assembly complex in Tennessee.

Lawler said the delay would allow Ford to spend more time reducing battery costs , making the future truck more affordable.

Lawler said this new family of hybrid SUVs would include propulsion options but didn't specify whether that would include a plug-in hybrid option or say when these cars would go on sale.

Ford's stock price was up 1% Wednesday morning following the news.

EV growing pains

Ford's revised EV strategy is just the latest in a series of shifts from car companies this year as they adjust to a more practical and frugal group of EV shoppers.

That has led to a mismatch of supply and demand for EVs that car companies are scrambling to remedy.

In addressing the affordability issue with EVs, Ford's new strategy announced this week also includes another electric pickup truck coming in 2027 that will be engineered on a more affordable platform.

Ford has leaned heavily on its hybrid offerings as demand for those vehicles has increased. Hybrids appeal more to shoppers who are looking for a practical replacement for their gas-powered car, not just an extra car for the driveway.

"It's coming back to understanding the customer," Lawler said. "The goal here is to be nimble and to pivot."

331 Swiss International passengers get stranded 20 hours in Kazakhstan after plane goes off runway

Hundreds of air passengers had to wait nearly a day to carry on with their travels after their plane got stuck in the mud attempting to take off after a "stopover" in Kazakhstan on Saturday.

Swiss International Air Lines Flight 161's intended travel route was from Tokyo to Zurich. Instead, it stopped at Astana International Airport due to a medical incident, the airline confirmed to FOX Business.  

"The passenger concerned was handed over to medical personnel on site," Swiss International Air Lines said in a statement.

When the Boeing 777 prepared to take off again, Astana's taxiway was closed, which meant the pilots had to try to turn the plane around 180 degrees while still on the runway.

"The aircraft's nose wheel got caught in the grass," according to one user on X. Post pictures show the plane stuck in mud. It was towed back onto the runway before being checked for any damage.

As for the passengers, Austrian Airlines stepped in to help its "sister airline," the company confirmed to FOX Business.  "Austrian Airlines sent a Boeing 777-200 aircraft to the Kazakh capital Astana to transport the passengers of SWISS to Vienna," a statement reads. The 331 passengers took off 20 hours after their first plane landed in Kazakhstan. 

After that, Swiss International Air Lines dispatched another 777 to take them from Vienna to Zurich. 

Both Austrian and Swiss International Air Lines are part of Lufthansa group.

"We thank all our passengers for their understanding and patience in this exceptional and unforeseen situation," Swiss told Business Insider. "We apologize once again for any inconvenience caused. A big thank you also goes to all the employees involved for their tireless and outstanding efforts."

No passengers were injured, and the plane that got stuck was cleared to return to flying after being checked out by airline technical specialists in consultation with Boeing, local and Swiss authorities. A new Swiss International Air Lines crew will transfer the aircraft to Zurich as soon as possible, the airline said.

Back in April, a Lufthansa flight from Frankfurt to Los Angeles had a "rough landing" at Los Angeles International Airport. 

The Boeing 747-8 was caught on camera by LA-based Airline Videos Live, bouncing off the runway and attempting to land again before taking off, circling around the airport and then finally landing safely after its second attempt. 

Days prior, a Swiss International Air Lines flight traveling from New York City to Zurich had to abort takeoff, averting a "potentially dangerous situation," the airline confirmed.

Flight LX17 from John F. Kennedy Airport left the gate at 4:21 p.m. April 17, according to FlightAware. The aircraft was cleared for takeoff at the same time an air traffic controller on another frequency cleared four other jets to cross the runway, according to audio obtained by NPR.

Food industry fires back at kamala harris’ price control plans to combat soaring grocery prices.

Food industry executives pushed back on Vice President Kamala Harris’ claim that they were “price gouging” by raising the cost of groceries and making it more expensive for Americans to eat.

Harris, the Democratic Party nominee for president, blamed corporate greed for soaring prices at supermarkets and said there was a need to institute price controls in order to bring down the cost of food nationwide , which has soared since President Biden took office.

Food companies responded that the costs of labor and raw materials have soared due to high inflation — necessitating price hikes. They also said they need to maintain healthy profit margins to keep developing new products.

Vice President Kamala Harris' plan to ban "price gouging" was criticized by food industry representatives.

“We understand why there is this sticker shock and why it’s upsetting,” Andy Harig, a vice president at FMI, a trade group representing food retailers and suppliers, told the Wall Street Journal.

“But to automatically just say there’s got to be something nefarious, I think to us that is oversimplified.”

Some economists say that attempts to rein in price gouging could effectively be a tool to control prices, which could have unintended consequences.

“It can be very hard to create any price control that is not gameable,” Michael Sinkinson, an economist at Northwestern University’s Kellogg School of Management who was also on President Biden’s Council of Economic Advisers, told The Journal.

PRICE CONTROLS Pitch:  A “first-ever” federal ban on “price gouging.”

What’s wrong with it:  What’s gouging? What’s excessive? It does not say, and price controls invariably backfire as demand increases for limited goods.

Cost:   Black markets, hoarding, less competition … and higher inflation

CHILD TAX CREDIT

Pitch:  Restore the COVID-era child tax credit of $3,600, but raise it even more to $6,000 for the first year of a child’s life.

What’s wrong with it:  It all comes at a massive cost, which is why it wasn’t renewed when the pandemic was over. The credit also disincentivized work, and helped fuel inflation as parents spent more on child care.

Cost: $1.2 trillion

HOUSING GIVEAWAY

Thesis:  Up to $25,000 in down-payment assistance for first-time homebuyers.

Critique:  Will likely spur even more inflation. With the government chipping in money to help buy a home, home prices will go up.

Cost: $100 billion

BUILDER TAX BREAKS

Thesis:  A $40 billion “innovation fund” to get cities to build more housing.

Critique:  Harris again does not trust the market to operate as it always has — demand for homes will spur more construction. Instead she wants to give companies tax breaks, which likely won’t result in affordable housing.

“How do you set a price control? What is the right benchmark?”

Under the Biden-Harris administration, grocery prices have shot up 21%, part of an inflation surge that has raised overall costs by about 19% and soured many Americans on the economy, even as unemployment fell to historic lows.

Grocery prices were 27% higher in July than they were during the same month in 2019 — a year before the coronavirus pandemic upended supply chains and wreaked havoc in the market.

Harris said that if she were to be elected president, her administration would ban price gouging by food suppliers and grocery stores.

During the Biden-Harris administration, food prices have shot up by 20%.

She said her administration would empower the Federal Trade Commission and state attorneys general to issue new penalties for companies that exploit consumers to amass profits on food and groceries.

Her opponent, former President Donald Trump, blasted the proposal, calling it a “Soviet style” policy that would cause even higher inflation.

“The proposal calling for a ban on grocery price gouging is a solution in search of a problem,” the National Grocers Association told the Journal.

Executives at food companies said profit margins are modest compared with other industries.

Harris said she wants to implement price controls to prevent food companies from hiking costs.

The Washington Post, whose editorial page is sympathetic to Democrats, also panned Harris’ proposal , saying that the “price gouging” ban is a “populist gimmick.”

“Inflation spiked in 2021 mainly because the pandemic snarled supply chains, and … the Federal Reserve’s policies, which the Biden-Harris administration supported, are working to slow it,” the newspaper wrote.

Instead of “level[ing] with voters,” the veep “opted for a less forthright route: Blaming big business,” the Jeff Bezos-owned newspaper wrote.
